  • 2 leaves bay leaves
  • 1 teaspoon hot sauce
  • 1 cup okra (optional, sliced)
  • 4 cups long-grain rice, cooked
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Pat the chicken thighs dry with paper towels and evenly coat them with 1 tablespoon of Cajun seasoning.

In a large pot or Dutch oven, heat 2 tablespoons of vegetable oil over medium-high heat. Add the chicken thighs and sear for 3-4 minutes on each side until golden brown. Remove the chicken from the pot and set aside.
