Ingredients

  • 2 pieces chicken breast
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 12 ounces penne pasta
  • 1 cup heavy cream
  • 1 cup parmesan cheese
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons butter
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 3 cloves garlic
  • 1 medium onion
  • 0.5 cup chicken broth
  • 2 tablespoons fresh parsley

Directions

Step 1

Slice each chicken breast into thin strips. In a medium bowl, toss the chicken strips with 1 tablespoon of olive oil and Cajun seasoning until well coated. Set aside.

Step 2

Cook the penne pasta according to package instructions until al dente. Drain and set aside.

Step 3

Meanwhile, in a large frying pan, heat the remaining 1 tablespoon of olive oil and butter over medium-high heat. Add the seasoned chicken strips and cook for 5-7 minutes until golden brown and cooked through. Remove chicken from the pan and set aside.

Step 4

Using the same pan, add diced onion and bell peppers. Cook for 3-4 minutes until they start to soften. Add minced garlic and cook for an additional minute until fragrant.
