Ingredients

  • 3 cups chicken broth
  • 1.5 cups long-grain white rice
  • 1.5 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 0.5 teaspoon dried thyme
  • 2 bay leaves
  • 2 tablespoons vegetable oil
  • 0.25 cup green onions, chopped (for garnish)
  • 0.25 cup fresh parsley, chopped (for garnish)

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and slice the andouille sausage into 1/4-inch rounds.

Step 2

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.

Season the chicken pieces with a pinch of salt, pepper, and 1 teaspoon of Cajun seasoning. Add them to the pot and cook until lightly browned, about 5-6 minutes. Remove and set aside.

Add the sliced sausage to the pot and cook until browned, about 3-4 minutes. Remove and set aside with the chicken.
