Ingredients

  • 2 pieces Chicken breast
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 3 cloves Garlic (minced)
  • 1 piece Red bell pepper (thinly sliced)
  • 1 piece Yellow bell pepper (thinly sliced)
  • 1.5 cups Heavy cream
  • 1 cup Parmesan cheese (grated)
  • 2 tablespoons Fresh parsley (chopped)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 12 ounces Linguine pasta
  • 4 quarts Water
  • 1 tablespoon Salt for pasta water

Directions

Step 1

Bring a large pot of water (4 quarts) to a boil. Add 1 tablespoon of salt and the linguine pasta. Cook according to package instructions until al dente, then drain and set aside.

Step 2

While the pasta cooks, slice the chicken breasts into thin strips. Place the strips in a bowl and coat them with the Cajun seasoning.

Step 3

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the seasoned chicken strips and cook for 5-6 minutes until golden brown and fully cooked. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, add the remaining olive oil and butter. Sauté the minced garlic, red bell pepper, and yellow bell pepper for 2-3 minutes until softened.

Reduce the heat to medium, and pour in the heavy cream. Stir gently for 2 minutes, then add the grated Parmesan cheese, chopped parsley, 0.5 teaspoons of salt, and 0.25 teaspoons of black pepper. Stir until the cheese is melted and the sauce is creamy.

Return the cooked chicken to the skillet, along with the drained linguine. Toss everything together to coat the pasta and chicken in the sauce evenly.
