  • 8 ounces Andouille sausage
  • 12 ounces Penne pasta

  • 1.5 cups Heavy cream
  • 1 cup Chicken broth
  • 1 cup Parmesan cheese, grated
  • 1 cup Diced tomatoes (canned, drained)
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes (optional)

Directions

Step 1

Cook the penne pasta in a large pot of salted, boiling water according to the package instructions until al dente. Drain and set aside.

Step 2

Slice the chicken breasts into bite-sized strips. Slice the andouille sausage into thin rounds.

Season the chicken strips with 1 tablespoon of Cajun seasoning, ensuring they're evenly coated.

Heat a large skillet over medium heat. Add 1 tablespoon of unsalted butter and the olive oil.
