  • 2 stalks (diced) Celery
  • 1 medium (seeded and finely diced) Jalapeño
  • 0.25 cup (finely chopped) Fresh parsley
  • 3 stalks (sliced thinly) Green onions
  • 0.25 cup Olive oil
  • 3 tbsp Red wine vinegar
  • 2 tbsp Fresh lime juice
  • 1.5 tsp Cajun seasoning
  • 1 tsp Garlic powder
  • 1 tsp Sugar
  • 0.5 tsp (adjust to taste) Salt
  • 0.5 tsp Black pepper
  • 0 (optional, for serving) Tortilla chips

Directions

Step 1

In a large mixing bowl, combine the black-eyed peas, diced red and green bell peppers, red onion, cherry tomatoes, celery, jalapeño, parsley, and green onions.
