Ingredients

  • 1 medium head green cabbage
  • 12 oz andouille sausage
  • 1 medium onion
  • 1 medium bell pepper (any color)
  • 2 teaspoons minced garlic
  • 2 cups cooked white rice
  • 15 oz (1 can) fire-roasted diced tomatoes
  • 8 oz (1 can) tomato sauce
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil
  • 1.5 cups shredded cheddar cheese
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Chop the cabbage into bite-sized pieces and set aside.

Step 3

Dice the onion and bell pepper, and slice the andouille sausage into thin rounds.

Step 4

Heat the olive oil in a large skillet over medium heat. Add the sausage and cook for 3-4 minutes until browned. Remove from the skillet and set aside.

In the same skillet, add the diced onion and bell pepper. Sauté for 4-5 minutes until softened, then add the garlic and cook for another minute.

Stir in the chopped cabbage, salt, black pepper, Cajun seasoning, paprika, and thyme. Cook for 8-10 minutes until the cabbage is tender and lightly wilted, stirring occasionally.

Reduce the heat to low and mix in the fire-roasted diced tomatoes, tomato sauce, and cooked sausage. Let the mixture simmer for 5 minutes to combine the flavors.

Layer half of the cabbage mixture in the bottom of a greased 9x13-inch casserole dish. Spread the cooked white rice evenly over the cabbage, then layer the remaining cabbage mixture on top.
