Ingredients

  • 1 3-4 pounds Whole chicken
  • 2 tablespoons Olive oil
  • 3 tablespoons Cajun seasoning
  • 1 tablespoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Brown sugar
  • 2 tablespoons Unsalted butter
  • 1 can Beer (12-ounce can, any lager or ale)
  • 1 sprig Fresh rosemary
  • 1 sprig Fresh thyme

Directions

Step 1

Preheat your grill to medium heat (375°F) or prepare a charcoal grill for indirect cooking by banking the coals to one side.

Step 2

Rinse the whole chicken under cold water and pat it dry with paper towels. Remove any giblets or excess fat if necessary.

Step 3

In a small bowl, mix together the Cajun seasoning, paprika, garlic powder, salt, black pepper, and brown sugar to make the spice rub.

Step 4

Brush the chicken all over with olive oil, ensuring that the surface is evenly coated. Generously rub the spice mixture over the entire chicken, including inside the cavity.

Step 5

Open the beer can and pour about 1/4 of the beer out to make room. Add the sprigs of rosemary and thyme into the can for additional flavor.

Step 6

Carefully lower the chicken cavity onto the open beer can so that the chicken is sitting upright. Adjust the legs to form a tripod with the beer can to ensure stability.

Step 7

If grilling: Place the chicken, beer can and all, in the center of the grill over indirect heat (away from direct flames). Cover the grill and let the chicken cook for about 1.5 hours or until the internal temperature of the thickest part of the thigh reaches 165°F.

Step 8

If oven roasting: Place the chicken, still seated on the beer can, on a baking sheet or roasting pan. Roast in the oven at 375°F for 1.5 hours or until fully cooked to an internal temperature of 165°F.

Step 9

During the last 30 minutes of cooking, baste the chicken with melted butter to enhance browning and flavor.

Step 10

Once cooked, carefully remove the chicken and beer can from the grill or oven. Let the chicken rest for 10-15 minutes before removing it from the can. This helps the juices redistribute and prevents burns when handling the hot beer can.

Step 11

Carve the chicken and serve warm. Pair with grilled vegetables, cornbread, or a crisp coleslaw for a complete meal.
