  • 4 ounces Cream cheese (softened)
  • 0.5 cup Breadcrumbs (panko or regular)
  • 1.5 tablespoons Cajun seasoning
  • 1 teaspoon Paprika
  • 2 tablespoons Olive oil
  • 0.75 cup Beef broth
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley (chopped for garnish)
  • 8 pieces Toothpicks or kitchen twine

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place the beef flank steak on a cutting board. Pound it with a meat mallet to an even thickness, about 1/2 inch. Set aside.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the smoked sausage, bell pepper, celery, and onion. Cook until the vegetables are softened, about 5 minutes.

After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the internal temperature of the beef reaches 135°F (medium-rare) to 145°F (medium).

Remove the beef roll from the oven and let it rest for 10 minutes before slicing.
