Ingredients

  • 1 pound ground beef
  • 1 medium head green cabbage
  • 1 large yellow onion
  • 1 large bell pepper
  • 3 cloves minced garlic
  • 2 tablespoons cajun seasoning
  • 1 14.5-ounce can diced tomatoes
  • 1 8-ounce can tomato sauce
  • 1 cup chicken or beef broth
  • 1 cup white rice (uncooked)
  • 1.5 cups shredded cheddar cheese
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish with a light coat of olive oil.

Step 2

In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it into small crumbles with a wooden spoon. Drain any excess fat and set aside.

Step 3

Finely chop the cabbage into bite-sized pieces. Dice the onion and bell pepper. Mince the garlic.

Step 4

In the same skillet, add the onion, bell pepper, and garlic. Sauté until softened, about 5 minutes.

Step 5

Add the cabbage to the skillet and cook until it begins to wilt, about 5-7 minutes. Stir occasionally for even cooking.

Step 6

Return the cooked ground beef to the skillet and mix it with the vegetables. Sprinkle in the Cajun seasoning, salt, and black pepper, stirring well.

Step 7

Add the diced tomatoes (with their juice), tomato sauce, and chicken (or beef) broth into the skillet. Stir everything together and bring it to a simmer.

Step 8

Stir in the uncooked rice and cook for 5 minutes, allowing it to soak up some of the liquid.

Step 9

Pour the beef, cabbage, and rice mixture into the prepared casserole dish, spreading it out evenly.

Step 10

Cover the dish tightly with aluminum foil and bake for 35 minutes in the preheated oven.

Step 11

Remove the casserole from the oven and carefully remove the foil. Sprinkle the shredded cheddar cheese evenly over the top.

Step 12

Return the dish to the oven, uncovered, and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 13

Remove the casserole from the oven and let it rest for 5 minutes before serving.

Step 14

Garnish with fresh herbs, if desired, and serve hot.
