  • 2 cups canned kidney beans
  • 6 slices bacon

  • 2 tablespoons brown sugar
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon hot sauce
  • 1 tablespoon olive oil
  • 1 cup water or vegetable broth

Directions

Step 1

In a large skillet or Dutch oven, cook the bacon slices over medium heat until crispy. Remove the bacon and place on a paper towel-lined plate to drain. Once cooled, crumble the bacon and set aside.

In the same skillet, leaving about 1 tablespoon of bacon grease, add the olive oil. Heat it over medium heat and sauté the diced onion, minced garlic, and diced green bell pepper until they become soft and fragrant, about 5-7 minutes.
