Ingredients

  • 3 cups canned navy beans
  • 6 slices bacon
  • 1 medium, finely diced yellow onion
  • 1 medium, diced (use red, green, or both for extra flavor) bell pepper
  • 3 minced garlic cloves
  • 1 15-ounce can canned diced tomatoes
  • 2 tablespoons tomato paste
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon hot sauce
  • 1 cup water or chicken stock
  • 1 teaspoon (to taste) salt
  • 0.5 teaspoon (to taste) black pepper
  • 2 tablespoons (chopped, for garnish) parsley

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon, let it cool slightly, and chop it into small pieces. Set aside.

Drain most of the bacon fat from the skillet, leaving about 1 tablespoon. Add the diced onion and bell pepper to the skillet and sauté over medium heat until softened, about 5-7 minutes.
