Ingredients

  • 1.5 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter, softened
  • 0.5 cups Creamy peanut butter
  • 0.5 cups Granulated sugar
  • 0.5 cups Light brown sugar, packed
  • 1 Large egg
  • 1 teaspoon Pure vanilla extract
  • 0.25 cups Extra granulated sugar (for rolling)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, use a hand mixer or stand mixer fitted with a paddle attachment to cream together the softened butter, peanut butter, granulated sugar, and light brown sugar until the mixture is light and fluffy, about 2-3 minutes.

Step 4

Beat in the egg and vanilla extract until fully incorporated.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.

Step 6

Use a tablespoon or a cookie scoop to portion out dough and roll each portion into a smooth ball.

Step 7

Roll each dough ball in the extra granulated sugar to coat it lightly. Place the sugar-coated balls onto the prepared baking sheets, leaving about 2 inches between each cookie.

Step 8

Using a fork, gently press down on each dough ball to flatten it slightly and create a classic crisscross pattern on the tops of the cookies.

Step 9

Bake in the preheated oven for 9-10 minutes, or until the cookies are lightly golden around the edges. They may appear soft in the center, but they will firm up as they cool.

Step 10

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Store the cooled cookies in an airtight container at room temperature for up to 1 week. Enjoy!
