Ingredients

  • 2 cups long-grain white rice
  • 4 cups water
  • 1 bunch (about 1 cup packed) fresh cilantro
  • 2 tablespoons unsalted butter
  • 1 medium white onion, finely diced
  • 2 cloves garlic cloves, minced
  • 2 tablespoons lime juice
  • 1 teaspoon salt
  • 1 tablespoon olive oil

Directions

Step 1

Rinse the rice under cold water until the water runs clear and set it aside to drain.

Bring 4 cups of water to a boil in a medium pot. Add the rice, 1 teaspoon of salt, and 1 tablespoon of olive oil. Stir once and lower the heat to a simmer. Cover the pot and let cook for 15 minutes or until the water is fully absorbed.

While the rice cooks, prepare the cilantro mixture. Thoroughly wash the cilantro and roughly chop the leaves. Place the cilantro into a blender or food processor with the lime juice and a small splash of water to create a thick puree. Set aside.
