Ingredients

  • 2 whole ripe bananas
  • 2 tablespoons unsalted butter
  • 0.25 cup brown sugar
  • 0.25 cup brewed coffee
  • 0.25 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons dark rum
  • 4 scoops vanilla ice cream
  • 1 cup whipped cream
  • 2 tablespoons crushed pecans (optional)

Directions

Step 1

Peel the bananas and slice them lengthwise into halves. Set aside.

Step 2

In a large skillet, melt the butter over medium heat.

Step 3

Add the brown sugar and stir until dissolved, creating a caramel-like mixture.

Step 4

Pour in the brewed coffee and stir gently to combine.

Step 5

Sprinkle ground cinnamon into the skillet and stir to incorporate the flavor.

Step 6

Place the banana slices in the skillet, cut side down. Cook for 2-3 minutes until they soften and become caramelized, then flip and cook another 2 minutes on the other side.

Step 7

Add the vanilla extract and give the mixture a gentle swirl.

Step 8

Carefully pour the dark rum into the skillet and, using a long lighter, ignite it to flambé. Allow the alcohol to burn off and the flames to extinguish naturally (about 30 seconds).

Step 9

Remove the skillet from heat, allowing the caramel-coffee sauce to slightly thicken.

Step 10

To serve, place 2 scoops of vanilla ice cream in each dish. Top with the caramelized bananas.

Step 11

Drizzle additional sauce from the skillet over the bananas and ice cream.

Step 12

Finish with a generous dollop of whipped cream and sprinkle crushed pecans on top if desired.
