  • 0.5 cups Mayonnaise
  • 1 piece Chipotle pepper in adobo sauce
  • 1 clove Garlic
  • 2 tablespoons Lime juice
  • 2 pieces Anchovy fillets
  • 0.5 cups Cotija cheese
  • 0.25 cups Parmesan cheese
  • 1 cup Cherry tomatoes
  • 1 piece Avocado

Directions

Step 1

Preheat the oven to 375°F (190°C).

Cut the corn tortillas into thin strips, about 1/4-inch wide.

Toss the tortilla strips with 1 tablespoon of olive oil and a pinch of salt. Spread them evenly on a baking sheet and bake for 5-7 minutes, or until golden and crispy. Set aside to cool.
