Ingredients

  • 2 heads Romaine lettuce
  • 1 cup Parmesan cheese (shaved or grated)
  • 2 cups Crusty bread (e.g. sourdough or baguette)
  • 5 tablespoons Olive oil
  • 2 Garlic cloves (minced)
  • 3 Anchovy fillets (optional)
  • 2 Egg yolks
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper (freshly ground)

Directions

Step 1

Preheat your oven to 375°F (190°C). Cut the crusty bread into 1-inch cubes to make croutons.

Step 2

Spread the bread cubes on a baking sheet and drizzle with 3 tablespoons of olive oil. Toss to coat evenly. Sprinkle with a pinch of salt and bake for 8–10 minutes, or until golden and crispy. Remove and let cool.

Step 3

Wash and thoroughly dry the romaine lettuce. Tear the lettuce into bite-sized pieces and place in a large salad bowl.

Step 4

In a small skillet on medium heat, sautée the minced garlic with 2 tablespoons of olive oil for 1–2 minutes, or until fragrant. Be careful not to burn the garlic. Set aside to cool.

Step 5

In a medium mixing bowl, mash the anchovy fillets (if using) into a paste with a fork. Add the sautéd garlic, egg yolks, lemon juice, Dijon mustard, Worcestershire sauce, salt, and black pepper. Whisk until smooth.
