Ingredients

  • 2 lbs Baby potatoes
  • 2 large Red onion
  • 3 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 Garlic cloves
  • 0.5 cup Mayonnaise
  • 2 tbsp Lemon juice
  • 0.25 cup Parmesan cheese
  • 1 tsp Dijon mustard
  • 0.5 tsp Anchovy paste
  • 2 tbsp Fresh parsley

Directions

Step 1

Rinse the baby potatoes thoroughly under cold water to remove any dirt, and then cut them in half.

Step 2

Place the potatoes in a large pot, cover them with water, and add a pinch of salt. Bring the water to a boil over medium-high heat, then reduce to a simmer. Cook the potatoes for about 10-12 minutes, or until they are fork-tender. Drain and set aside to cool slightly.

Step 3

While the potatoes are cooking, peel the red onions and slice them into 1/2-inch thick rings. Lightly brush the onion slices with 1 tablespoon of olive oil and season them with a pinch of salt and pepper.
