Ingredients

  • 450 grams green beans
  • 3 tablespoons olive oil
  • 2 cloves garlic
  • 2 pieces anchovy fillets
  • 1 teaspoon Dijon mustard
  • 2 tablespoons lemon juice
  • 30 grams Parmesan cheese (freshly grated)
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)
  • 2 tablespoons toasted breadcrumbs

Directions

Step 1

Wash and trim the green beans, removing the stems. Set them aside.

Step 2

Bring a large pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes, or until they are bright green and tender-crisp.

Step 3

Immediately transfer the blanched green beans to a bowl of ice water to stop the cooking process. Drain and set aside.

Step 4

In a large skillet, heat the olive oil over medium-low heat. Add the minced garlic and anchovy fillets. Use a wooden spoon to mash the anchovies into the oil as they cook, stirring constantly for about 1-2 minutes, until fragrant.

Step 5

Stir in the Dijon mustard and lemon juice, whisking until fully combined. Reduce the heat to low and add the blanched green beans, tossing them to coat evenly in the dressing.

Step 6

Sprinkle in the grated Parmesan cheese, salt, black pepper, and red pepper flakes (if using). Toss well to combine and warm the beans through, about 2-3 minutes.

Step 7

Transfer the dressed green beans to a serving dish and top with toasted breadcrumbs for an added crunch.

Step 8

Serve warm or at room temperature and enjoy your Caesar Green Beans!
