  • 4 medium Russet potatoes
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 2 tablespoons Olive oil
  • 1 pound Ground breakfast sausage
  • 1 medium Onion
  • 1 medium Green bell pepper
  • 6 large Eggs
  • 1 cup Cheddar cheese
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel and dice the russet potatoes into 1/2-inch cubes. Rinse in cold water and pat dry to remove excess starch.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced potatoes, salt, black pepper, and paprika. Cook for 10-12 minutes, stirring occasionally, until the potatoes are golden brown and crispy. Remove from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Cook the ground breakfast sausage over medium heat, breaking it apart with a wooden spoon, until browned and fully cooked, about 8-10 minutes.

Dice the onion and green bell pepper, then add them to the skillet with the sausage. Cook for 5-6 minutes, stirring occasionally, until the vegetables are softened and fragrant.
