Ingredients

  • 3 medium Tomatoes
  • 1 medium Red onion
  • 1 inch piece Fresh ginger
  • 1 small Green chili
  • 2 tablespoons Fresh cilantro
  • 2 tablespoons Lemon juice
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 1 teaspoon Vegetable oil (optional)

Directions

Step 1

Wash and pat dry all the fresh produce.

Step 2

Dice the tomatoes into small, bite-sized pieces and place them in a large mixing bowl.

Step 3

Peel and finely slice the red onion into thin half-moons. Add the onions to the bowl with the tomatoes.

Step 4

Peel the ginger and julienne it into thin strips. Add the ginger to the salad mixture.

Step 5

Slice the green chili thinly (remove seeds for less heat if desired) and add it to the bowl.

Step 6

Roughly chop the fresh cilantro and sprinkle it over the salad.

Step 7

In a small bowl, mix lemon juice, salt, black pepper, and vegetable oil (if using). Whisk until combined to make the dressing.

Step 8

Pour the dressing over the salad ingredients and gently toss everything together until well-coated.

Step 9

Taste and adjust seasoning with more salt or lemon juice if needed.

Step 10

Let the salad rest for 5-10 minutes to allow the flavors to meld together. Serve fresh as a side dish or appetizer.
