  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion (chopped)
  • 1 medium Red bell pepper (sliced)
  • 1 medium Green bell pepper (sliced)
  • 2 medium Carrots (sliced into rounds)
  • 4 Garlic cloves (minced)
  • 0.5 cup Dry white wine
  • 28 ounces Canned diced tomatoes
  • 1 cup Chicken broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Fresh rosemary (chopped)
  • 2 tablespoons Fresh parsley (chopped, for garnish)
  • 0.25 teaspoon Optional: Crushed red pepper flakes

Directions

Step 1

Season the chicken thighs with 1 teaspoon of salt and 1 teaspoon of black pepper on both sides.

Heat the olive oil in a large skillet or Dutch oven over medium-high heat.

Sear the chicken thighs, skin-side down first, for about 4-5 minutes per side until golden brown. Remove the chicken from the pan and set aside.

Return the chicken thighs to the skillet, nestling them into the sauce. Spoon some sauce over the top of the chicken.
