Ingredients

  • 1 medium head (about 2 pounds) Cabbage
  • 4 medium (about 1.5 pounds) Potatoes
  • 3 tablespoons Olive oil
  • 3 cloves Garlic
  • 1 medium Onion
  • 1 cup Vegetable broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Ground paprika
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel and dice the potatoes into 1-inch cubes. Rinse and drain well. Set aside.

Step 2

Remove the outer leaves of the cabbage and chop it into bite-sized pieces. Wash and drain thoroughly.

Step 3

Finely mince the garlic. Dice the onion into small pieces.

Step 4

In a large skillet or Dutch oven, heat olive oil over medium heat.

Step 5

Add diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until fragrant and the onions become translucent.

Add the diced potatoes to the skillet. Cook for 5 minutes, stirring occasionally, to lightly brown the potatoes.

Stir in the chopped cabbage. Season with salt, black pepper, and ground paprika.

Step 8

Pour the vegetable broth into the skillet. Stir well, then cover with a lid.

Step 9

Reduce the heat to low and let the mixture simmer for 20-25 minutes, stirring occasionally, until the potatoes are tender and the cabbage is soft.

Taste and adjust seasoning, adding more salt or pepper as needed.

Step 11

Garnish with freshly chopped parsley before serving.

Step 12

Serve warm as a side dish or enjoy it as a light main course with a slice of bread.
