Ingredients

  • 1 head Green cabbage
  • 1 tablespoon Juniper berries
  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 1 medium, diced Yellow onion
  • 2 cloves, minced Garlic
  • 2 teaspoons Apple cider vinegar
  • 0.5 cup Vegetable broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Cracked black pepper
  • 1 leaf Bay leaf

Directions

Step 1

Core and thinly slice the cabbage into bite-sized strips. Rinse and set aside.

Step 2

Crush the juniper berries gently with the back of a spoon to release their aroma. Set them aside.

Step 3

Heat a large skillet or Dutch oven over medium heat. Add the butter and olive oil, allowing the butter to melt completely.

Step 4

Add the diced onion to the skillet and sauté for 4-5 minutes, or until softened and translucent.

Step 5

Stir in the minced garlic and crushed juniper berries, cooking for another 1-2 minutes until fragrant.

Step 6

Add the sliced cabbage to the skillet. Toss gently to combine and coat the cabbage in the butter mixture.

Step 7

Season the cabbage with salt and cracked black pepper. Add the bay leaf for additional flavor.

Step 8

Pour in the vegetable broth and apple cider vinegar, stirring well to combine.

Step 9

Lower the heat to medium-low, cover the skillet with a lid, and let the cabbage simmer for 20-25 minutes, stirring occasionally, until tender.

Step 10

Once cooked, remove the bay leaf. Taste and adjust seasoning, if needed.

Step 11

Transfer to a serving dish and serve warm as a side dish, or enjoy as a light main with crusty bread.
