Ingredients

  • 2 medium (sliced) Carrots
  • 2 medium (sliced) Celery stalks
  • 1 small head (chopped) Green cabbage
  • 2 cups (diced) Cooked ham
  • 6 cups Chicken or vegetable broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon (chopped) Fresh thyme
  • 2 tablespoons (chopped) Fresh parsley
  • 1 piece Bay leaf
  • 1 teaspoon (or to taste) Salt
  • 0.5 teaspoon Ground black pepper
  • 1 tablespoon Lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and sauté for 3-4 minutes, until softened and translucent.

Stir in the minced garlic, sliced carrots, and celery. Cook for another 3 minutes.

Add the chopped cabbage to the pot and stir well. Cook for 5 minutes until the cabbage begins to soften.
