  • 2 medium, sliced Carrots
  • 2 sliced Celery stalks
  • 1 medium head, shredded Cabbage
  • 2 medium, peeled and cubed Russet potatoes
  • 2 cups, diced Cooked ham
  • 8 cups Chicken or vegetable broth
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Dried thyme
  • 2 tablespoons, chopped (optional, for garnish) Parsley

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes until softened and translucent.

Stir in the minced garlic, sliced carrots, and sliced celery. Cook for another 3-4 minutes, stirring occasionally.
