Ingredients

  • 2 tablespoons olive oil
  • 14 ounces smoked sausage
  • 1 large yellow onion
  • 3 medium carrots
  • 3 celery stalks
  • 1 medium head green cabbage
  • 3 cloves garlic
  • 28 ounces diced tomatoes
  • 8 cups chicken or vegetable stock
  • 4 medium potatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 2 bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh parsley

Directions

Step 1

Heat a large, heavy-bottomed pot or Dutch oven over medium heat and add olive oil.

Step 2

Slice the smoked sausage into thin rounds. Brown the sausage in the hot oil for 4-5 minutes, stirring occasionally, until it is caramelized and fragrant. Remove the sausage from the pot and set aside.

Step 3

Dice the yellow onion, slice the carrots and celery into thin pieces, and chop the garlic cloves. Add these to the same pot, cooking for 5-7 minutes or until the onions become translucent.

Step 4

While the vegetables cook, core and roughly chop the cabbage into bite-sized pieces. Peel and dice the potatoes into 1-inch cubes.

Add the chopped cabbage, diced tomatoes (with their juice), chicken or vegetable stock, and diced potatoes to the pot. Stir to combine.

Stir in the browned sausage, dried thyme, smoked paprika, bay leaves, salt, and black pepper.
