Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 small green cabbage, chopped
  • 2 medium carrots, sliced into thin rounds
  • 2 celery stalks, chopped
  • 14.5 ounces diced tomatoes, canned
  • 4 cups vegetable broth
  • 2 tablespoons hot sauce
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon crushed red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and cook for 3–4 minutes, stirring occasionally, until it becomes translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the chopped cabbage, carrots, and celery to the pot. Stir and cook for about 5 minutes to allow the vegetables to soften slightly.

Step 5

Pour in the canned diced tomatoes and vegetable broth. Stir to combine.

Step 6

Add the hot sauce, paprika, ground cumin, crushed red pepper flakes, salt, and black pepper. Mix well.

Step 7

Bring the soup to a boil over high heat, then reduce the heat to low. Cover the pot and let the soup simmer for 25–30 minutes, or until the vegetables are tender.

Step 8

Taste the soup and adjust the seasoning, adding more hot sauce or spices if desired.

Step 9

Ladle the soup into bowls and garnish with freshly chopped parsley if using.

Step 10

Serve hot and enjoy!
