Ingredients

  • 1.5 cups All-purpose flour
  • 1 tablespoons Baking powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 2 large Eggs
  • 0.75 cups Milk
  • 0.25 cups Olive oil
  • 1.5 cups (finely shredded) Cabbage
  • 1 cups Shredded cheddar cheese
  • 0.5 cups Chopped green onions
  • 1 teaspoons Dried parsley
  • 0.5 teaspoons Paprika

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease or line a 12-cup muffin tin with paper liners.

Step 2

In a large mixing bowl, combine the flour, baking powder, salt, black pepper, dried parsley, and paprika. Mix well to evenly distribute the dry ingredients.

Step 3

In a separate bowl, whisk together the eggs, milk, and olive oil until well combined.

Step 4

Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix.

Step 5

Fold in the shredded cabbage, cheddar cheese, and chopped green onions, making sure they are evenly distributed throughout the batter.

Step 6

Spoon the batter evenly into the prepared muffin tin, filling each cup about three-quarters full.

Step 7

Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Step 8

Remove the muffins from the oven and allow them to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. These cabbage muffins pair well with soups, salads, or as a standalone savory snack.
