Ingredients

  • 14 ounces kielbasa sausage
  • 1 head (medium) green cabbage
  • 3 medium potatoes
  • 2 large carrot
  • 1 medium yellow onion
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons (optional, chopped) fresh parsley

Directions

Step 1

Slice the kielbasa sausage into 1/4-inch thick rounds. Set aside.

Step 2

Cut the cabbage into quarters, remove the core, and thinly slice the leaves. Peel and dice the potatoes into 1/2-inch cubes. Peel and slice the carrots into thin rounds. Dice the onion and mince the garlic.

Step 3

Heat the olive oil in a large skillet or Dutch oven over medium-high heat.

Step 4

Add the sliced kielbasa to the skillet and cook for 4-5 minutes, stirring occasionally, until browned. Remove from the skillet and set aside on a plate.

Step 5

Add the diced onion to the skillet and sauté for 2-3 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

Step 6

Add the potatoes and carrots to the skillet. Cook for 5-6 minutes, stirring occasionally, until they begin to soften and brown slightly.

Step 7

Stir in the sliced cabbage, chicken broth, paprika, dried thyme, salt, and black pepper. Mix well to combine.

Step 8

Cover the skillet with a lid and reduce the heat to medium. Cook for 10-12 minutes, stirring occasionally, until the cabbage is tender and the potatoes are fully cooked.

Step 9

Return the browned kielbasa to the skillet and stir to combine with the vegetables. Cook for an additional 2-3 minutes to heat the sausage through.

Step 10

Taste the dish and adjust seasoning with more salt and pepper if needed.

Step 11

Garnish with chopped fresh parsley if desired. Serve hot.
