  • 1 block Firm tofu
  • 2 tablespoons Olive oil

  • 6 cups Vegetable broth

  • 1 tablespoon Rice vinegar
  • 3 Green onions
  • 1 teaspoon Sesame oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Peel and finely mince the garlic and ginger. Slice the green onions thinly and set aside the green stems for garnish.

Core the cabbage and cut it into bite-sized pieces. Pat the tofu dry with paper towels and cut it into 1-inch cubes.

Heat olive oil in a large pot over medium heat. Add the garlic and ginger, sautéing for 1-2 minutes until fragrant.
