Ingredients

  • 400 grams Fresh egg noodles (Chow Mein noodles)
  • 300 grams Beef (sirloin or flank steak), thinly sliced
  • 3 tablespoons Oyster sauce
  • 2 tablespoons Soy sauce
  • 1 tablespoon Dark soy sauce
  • 2 teaspoons Cornstarch
  • 2 teaspoons Sesame oil
  • 3 tablespoons Vegetable oil
  • 3 cloves Garlic, minced
  • 1 medium Carrot, julienned
  • 1 medium Green bell pepper, thinly sliced
  • 200 grams Bean sprouts
  • 2 stalks Spring onions, chopped
  • 1 pinch Salt
  • 1 pinch White pepper

Directions

Step 1

Prepare the beef marinade by combining the thinly sliced beef with 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, and cornstarch. Mix well and let it marinate for 15 minutes.

Step 2

In a large pot, bring water to a boil and blanch the egg noodles for 1–2 minutes. Drain and rinse with cold water. Toss noodles with 1 teaspoon of sesame oil to prevent sticking. Set aside.

Step 3

In a small bowl, mix 2 tablespoons of oyster sauce, 1 tablespoon of soy sauce, and 1 tablespoon of dark soy sauce. Set this sauce mixture aside.

Step 4

Heat 1 tablespoon of vegetable oil in a large wok or pan over high heat. Stir-fry the marinated beef for 2–3 minutes until browned and just cooked through. Remove the beef and set aside.

Step 5

In the same wok, add the remaining 2 tablespoons of vegetable oil. Add the minced garlic and stir-fry until fragrant, about 30 seconds.

Step 6

Add the julienned carrot and green bell pepper to the wok. Stir-fry for 2 minutes until slightly tender.

Step 7

Add the blanched noodles to the wok. Pour the sauce mixture over the noodles and toss well to coat evenly.

Step 8

Return the cooked beef to the wok along with the bean sprouts. Stir-fry for another 2–3 minutes until everything is heated through.

Step 9

Add a pinch of salt and white pepper to taste. Toss in the chopped spring onions and stir briefly.
