  • 2 cups elbow macaroni
  • 2 tablespoons olive oil

  • 4 cups baby spinach
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup whole milk
  • 2 cups cheddar cheese, shredded
  • 1 cup parmesan cheese, grated
  • 1 cup panko breadcrumbs
  • 2 tablespoons butter, melted
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried thyme

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish with non-stick spray or a thin layer of butter.

Step 2

Bring a large pot of salted water to a boil and cook the elbow macaroni according to the package directions until al dente. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add diced onion and cook for 2-3 minutes until softened.
