Ingredients

  • 1 cup Wild rice
  • 4 cups Water
  • 1 cup Unsalted butter
  • 0.5 cup All-purpose flour
  • 6 cups Chicken broth
  • 2 cups Cooked, diced turkey or chicken
  • 0.5 cup Shredded carrots
  • 0.25 cup Minced onion
  • 0.5 cup Chopped celery
  • 2 cups Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 cup Slivered almonds (optional, for garnish)

Directions

Step 1

Rinse the wild rice under cold water using a fine-mesh sieve to remove dust or debris.

Step 2

In a medium saucepan, combine the wild rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 45-50 minutes or until the rice is tender. Drain any excess liquid and set the rice aside.

Step 3

In a large stockpot, melt the butter over medium heat. Stir in the flour to create a roux, cooking for 2-3 minutes while stirring constantly until the mixture is smooth and light golden in color.

Step 4

Gradually whisk in the chicken broth, ensuring there are no lumps. Bring the mixture to a boil, then reduce the heat to a simmer and cook for 5-7 minutes until the base thickens.

Step 5

Add the cooked rice, diced turkey or chicken, shredded carrots, minced onion, and chopped celery to the thickened broth. Stir to combine and simmer for another 15 minutes to allow the flavors to meld together.

Step 6

Stir in the heavy cream, salt, and black pepper. Allow the soup to heat through on low heat for another 5 minutes, making sure not to boil.

Step 7

Taste and adjust the seasoning to your preference. If desired, garnish with slivered almonds before serving. Enjoy your creamy Byerly's Wild Rice Soup!
