Ingredients

  • 2 cups Almond flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Garlic powder
  • 0.5 teaspoons Salt
  • 1 stick Unsalted butter (cold, cubed)
  • 1 cup Sharp cheddar cheese (shredded)
  • 1 large Egg
  • 0.25 cup Sour cream
  • 1 tablespoon Minced fresh parsley (optional)
  • 2 tablespoons Butter (for brushing, melted)
  • 0.5 teaspoons Garlic powder (for brushing)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the almond flour, baking powder, garlic powder, and salt.

Step 3

Using a pastry cutter or your fingers, cut the cold butter into the almond flour mixture until it resembles coarse crumbs.

Step 4

Stir in the shredded sharp cheddar cheese.

Step 5

In a separate smaller bowl, whisk together the egg and sour cream until smooth.

Step 6

Add the egg mixture to the dry ingredients and lightly stir until the dough comes together. Avoid overmixing.

Step 7

If using, gently fold in minced parsley for a touch of color and freshness.

Step 8

Using a cookie scoop or your hands, divide the dough into 8 equal portions and place them onto the parchment-lined baking sheet. Flatten slightly to shape them into biscuit rounds.

Step 9

Bake the biscuits in the preheated oven for 12-15 minutes, or until the tops are golden brown.

Step 10

While the biscuits are baking, melt the butter for brushing and stir in the garlic powder.

Step 11

As soon as the biscuits are out of the oven, brush them generously with the garlic butter.

Step 12

Allow to cool for 5-10 minutes before serving. Enjoy warm!
