Ingredients

  • 1 package (usually 2 sheets) Puff pastry sheets
  • 1 large Ripe pear
  • 200 grams Brie cheese
  • 2 tablespoons Honey
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Fresh thyme leaves
  • 1 large Egg
  • 1 tablespoon Water
  • 1 tablespoon (for dusting) All-purpose flour

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Lightly flour your work surface and roll out the puff pastry sheets to smooth out any creases. Cut the sheets into 12 equal squares.

Step 3

Core and thinly slice the pear into 12 pieces. Keep the slices as uniform as possible for even cooking.

Step 4

Cut the Brie cheese into 12 small chunks, roughly matching the size of the pear slices.

Step 5

Place one slice of pear and one chunk of Brie in the center of each puff pastry square.

Step 6

Fold two opposite corners of the puff pastry over the pear and Brie, pressing gently to seal. You can use a dab of water to help seal the pastry if needed.

Step 7

Melt the butter and brush it lightly over each sealed pastry bite.

Step 8

In a small bowl, whisk together the egg and water to make an egg wash. Brush this mixture over the tops of the pastry for a golden finish.

Step 9

Sprinkle a pinch of fresh thyme leaves over each bite, and transfer the bites to the prepared baking sheet.

Step 10

Bake the bites in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.

Step 11

Remove from the oven and let the bites cool slightly. Drizzle honey over the warm bites before serving.

Step 12

Serve immediately and enjoy the perfect balance of buttery pastry, creamy cheese, and sweet fruit.
