Ingredients

  • 1 cup butterscotch chips
  • 0.75 cup peanut butter
  • 0.25 cup unsalted butter
  • 0.5 cup granulated sugar
  • 0.5 cup light brown sugar
  • 2 pieces large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup semi-sweet chocolate chips (optional for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch square baking pan with parchment paper, leaving some overhang on the sides for easy lifting later.

Step 2

In a small saucepan over low heat, melt the butterscotch chips and unsalted butter together, stirring constantly until smooth. Remove from the heat and let the mixture cool slightly.

Step 3

In a large mixing bowl, whisk together the granulated sugar, light brown sugar, and peanut butter until creamy and smooth.

Step 4

Add the eggs and vanilla extract to the sugar and peanut butter mixture. Whisk until fully incorporated.

Step 5

Slowly pour the slightly cooled butterscotch mixture into the large mixing bowl, stirring until everything is well combined.

Step 6

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Step 7

Gradually fold the dry ingredients into the wet ingredients, mixing until no streaks of flour remain but being careful not to overmix.

Step 8

Pour the batter into the prepared baking pan, spreading it evenly with a spatula.

Step 9

If desired, sprinkle semi-sweet chocolate chips over the top of the batter for an extra layer of flavor.

Step 10

Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out mostly clean with just a few moist crumbs.

Step 11

Allow the bars to cool completely in the pan on a wire rack. Once cooled, use the parchment paper overhang to lift the bars from the pan.

Step 12

Cut into 16 squares and serve. Store any leftovers in an airtight container at room temperature for up to 5 days.
