Ingredients

  • 1 medium-sized butternut squash
  • 4 tablespoons olive oil
  • 500 grams ground beef
  • 1 medium-sized yellow onion
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 teaspoons salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons pine nuts
  • 1 cup plain Greek yogurt
  • 2 cloves garlic
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Cut the butternut squash in half lengthwise and remove the seeds. Brush the flesh with 2 tablespoons of olive oil and sprinkle with a pinch of salt and black pepper.

Place the squash halves cut-side down on a baking sheet lined with parchment paper. Roast in the oven for 35-40 minutes or until the flesh is tender and caramelized. Remove from the oven and set aside.
