  • 1 cup Butternut squash (cooked and mashed)
  • 1.5 cups Almond flour
  • 0.25 cups Coconut flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 3 large Eggs
  • 0.5 cups Unsweetened almond milk
  • 0.25 cups Unsweetened applesauce
  • 1 teaspoon Liquid stevia or erythritol (optional, to taste)
  • 1 teaspoon Vanilla extract
  • 0.25 cups Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease with a non-stick spray.

Step 2

In a large mixing bowl, combine the almond flour, coconut flour, baking powder, ground cinnamon, ground nutmeg, and salt. Whisk until the dry ingredients are evenly mixed.
