  • 0.5 cup (crumbled) blue cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup baby spinach
  • 2 tablespoons butter

Directions

Step 1

Preheat your oven to 400°F (200°C).

In a bowl, toss the diced butternut squash with olive oil, ground cumin, smoked paprika, salt, and black pepper until evenly coated.

Spread the seasoned squash on a baking sheet lined with parchment paper and roast in the oven for 20 minutes or until tender and slightly caramelized.
