Prepare a large baking sheet by lining it with parchment paper or a silicone baking mat. Set aside.
In a heavy-bottomed saucepan, combine the granulated sugar, light brown sugar, buttermilk, unsalted butter, baking soda, and salt.
Place the saucepan over medium heat and stir constantly until the sugars and butter have melted together and the mixture is smooth.
Clip a candy thermometer to the side of the saucepan, ensuring the tip is submerged in the mixture but not touching the bottom of the pan.
Allow the mixture to cook without stirring until it reaches 235°F–240°F (soft ball stage). This should take about 20–25 minutes.
Once the mixture has reached the desired temperature, remove the saucepan from the heat and let it cool for 2 minutes.
Stir in the vanilla extract and toasted pecans, mixing quickly but thoroughly.
Working quickly, use a tablespoon or small scoop to drop spoonfuls of the mixture onto the prepared baking sheet. The mixture will begin to set as it cools, so move fast!
Let the pralines cool completely at room temperature until they harden, about 20 minutes.
Once set, remove the pralines from the parchment paper and store them in an airtight container at room temperature for up to 5 days.
