Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.5 teaspoons salt
  • 0.5 cups unsalted butter, softened
  • 1 cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 0.75 cups buttermilk
  • 2 cups fresh blueberries
  • 0.33 cups all-purpose flour (for streusel)
  • 0.33 cups brown sugar
  • 1 teaspoons ground cinnamon
  • 0.25 cups unsalted butter, melted (for streusel)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch square baking pan or line it with parchment paper.

Step 2

In a medium bowl, whisk together the 2 cups of all-purpose flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.

Step 4

Beat in the egg and vanilla extract until well combined.

Step 5

Gradually add the dry ingredients to the butter mixture in three parts, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined. Do not overmix.

Step 6

Gently fold in the blueberries, taking care not to crush them.

Step 7

Pour the batter into the prepared baking pan, spreading it out evenly with a spatula.

Step 8

For the streusel topping, combine the 0.33 cups of all-purpose flour, brown sugar, and ground cinnamon in a small bowl. Pour in the melted butter and mix with a fork until crumbly.

Step 9

Sprinkle the streusel evenly over the batter.

Step 10

Bake the cake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Step 11

Remove the buckle from the oven and allow it to cool in the pan for at least 15 minutes before serving.

Step 12

Cut into squares and serve warm or at room temperature. Enjoy!
