Ingredients

  • 2 Large onions
  • 2 cups Buttermilk
  • 1.5 cups All-purpose flour
  • 0.5 cups Cornstarch
  • 2 teaspoons Paprika
  • 1 teaspoon Cayenne pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 1 Egg
  • 1 cup Club soda (or sparkling water)
  • 4 cups Vegetable oil (for frying)
  • 1 tablespoon Hot sauce (optional)

Directions

Step 1

Peel onions and slice them into 1/2-inch thick rings. Separate each layer to create individual rings. Set aside.

Step 2

In a large bowl, combine buttermilk with the hot sauce (if using). Add the onion rings and ensure they are fully submerged. Allow them to soak for at least 15 minutes to absorb flavor and tenderize.

Step 3

In another large mixing bowl, whisk together the all-purpose flour, cornstarch, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper.

Step 4

In a small bowl, beat the egg, then add it to the flour mixture. Pour in the club soda slowly, and whisk until a smooth, thick batter forms. Adjust the consistency if needed by adding a tablespoon of flour or club soda at a time.

Step 5

Heat vegetable oil in a heavy-bottomed pot or deep fryer to 350°F (175°C). Ensure the oil is at least 2 inches deep to allow the rings to fry evenly.

Step 6

Remove the onion rings from the buttermilk, letting excess buttermilk drip off. Dip each ring into the batter, coating it completely, then carefully place it into the hot oil.

Step 7

Fry a few onion rings at a time, being careful not to overcrowd the pot. Cook each batch for 2-3 minutes per side, or until golden brown and crispy.

Step 8

Use a slotted spoon to transfer the fried onion rings to a paper towel-lined plate to drain excess oil.

Step 9

Serve the onion rings hot with your favorite dipping sauces, such as ranch, spicy mayo, or ketchup.
