Ingredients

  • 1 lb Florida shrimp (large, deveined, and butterflied)
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 4 cloves Garlic (minced)
  • 0.33 cup Dry white wine
  • 2 tablespoons Fresh lemon juice
  • 2 tablespoons Fresh parsley (chopped)
  • 0.25 teaspoon Red pepper flakes
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 12 oz Linguine or spaghetti (optional, for serving)
  • 0.25 cup Parmesan cheese (grated, optional)

Directions

Step 1

If serving with pasta, bring a large pot of salted water to a boil. Cook linguine or spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

Rinse the Florida shrimp under cold water, pat dry with paper towels, and ensure they are deveined and butterflied.

Step 3

In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat until the butter melts.

Step 4

Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 5

Stir in the red pepper flakes and cook for another 30 seconds.

Step 6

Add the shrimp to the skillet in a single layer. Sauté for 1-2 minutes per side, or until they just start to turn pink.

Step 7

Deglaze the pan with white wine, scraping up any browned bits from the bottom of the skillet with a wooden spoon.

Step 8

Add the fresh lemon juice, the remaining 2 tablespoons of butter, salt, and black pepper. Stir to combine and let the sauce simmer for 1-2 minutes.

Step 9

Toss in the chopped parsley and mix well.

Step 10

If serving over pasta, add the cooked pasta and reserved pasta water to the skillet. Toss to coat the pasta in the sauce. Sprinkle with grated Parmesan if desired.

Step 11

Serve the shrimp scampi immediately in shallow bowls, garnished with additional parsley or a wedge of lemon on the side.
