Ingredients

Directions

Step 1

Place the whole chicken breast-side down on a cutting board. Using kitchen shears, cut along both sides of the backbone and remove it. Flip the chicken over and press down firmly on the breastbone to flatten it. This is called butterflying the chicken.

In a small bowl, mix together the Dijon mustard, olive oil, minced garlic, lemon juice, chopped rosemary, salt, black pepper, and honey to form a marinade.
