Ingredients

  • 2 cups Heavy cream
  • 1 cup Whole milk
  • 0.75 cup Granulated sugar
  • 4 Egg yolks
  • 2 tablespoons Unsalted butter
  • 0.67 cup Black walnuts
  • 1 teaspoon Vanilla extract
  • 0.125 teaspoon Salt

Directions

Step 1

Toast the black walnuts in a dry skillet over medium heat for 2-3 minutes, stirring frequently, until fragrant. Remove from heat and set aside to cool.

Step 2

In a medium saucepan, combine the heavy cream, milk, and salt. Heat the mixture over medium heat, stirring occasionally, until it begins to steam but does not boil.

In a separate mixing bowl, whisk together the egg yolks and sugar until the mixture is pale and thick.

Step 4

Slowly pour about 1 cup of the hot cream mixture into the egg yolk mixture, whisking constantly to temper the eggs.

Pour the tempered egg mixture back into the saucepan with the remaining cream mixture. Cook over medium-low heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon (around 170°F, but do not let it boil).
