Ingredients

  • 500 grams baby carrots
  • 250 grams frozen sweet peas
  • 3 tablespoons unsalted butter
  • 1 tablespoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon fresh parsley
  • 2 cups water

Directions

Step 1

Add 2 cups of water to a medium-sized saucepan and bring it to a boil over medium-high heat.

Step 2

Once the water is boiling, add the baby carrots and cook for 8-10 minutes, or until they are tender but still slightly firm. Drain and set aside.

Step 3

In the same saucepan, add the frozen sweet peas and cook for 2-3 minutes, or until they are heated through. Drain and set aside with the carrots.

Step 4

Return the saucepan to the stove over low heat. Add the butter and allow it to melt completely.

Step 5

Stir in the honey, salt, and black pepper until well combined, creating a smooth butter glaze.

Step 6

Add the cooked baby carrots and sweet peas back into the saucepan. Toss gently to coat the vegetables evenly with the butter glaze.

Step 7

Cook for an additional 2-3 minutes, stirring occasionally to ensure the vegetables are fully coated and warmed through.

Step 8

Remove from heat and sprinkle the dish with freshly chopped parsley for garnish.

Step 9

Serve immediately and enjoy this colorful, buttery side dish!
