  • 2 tablespoons olive oil
  • 1 large yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 large carrot, diced
  • 2 celery stalks, diced
  • 2 teaspoons fresh thyme leaves
  • 2 tablespoons tomato paste
  • 500 milliliters chicken or vegetable stock
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 cup panko breadcrumbs
  • 0.5 cup parmesan cheese, grated
  • 2 tablespoons butter, melted

Directions

Step 1

Preheat your oven to 375°F (190°C).

Heat the olive oil in a large oven-safe skillet or casserole over medium heat.
