Ingredients

  • 12 oz spaghetti or fettuccine noodles
  • 6 tbsp unsalted butter
  • 1 tbsp olive oil
  • 3 cloves garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme leaves
  • 1 cup grated Parmesan cheese (optional)
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 8 cups water for boiling
  • 1 tbsp extra salt for pasta water

Directions

Step 1

Bring 8 cups of water to a boil in a large pot. Add 1 tablespoon of salt to the boiling water.

Step 2

Cook the noodles according to the package instructions until al dente, usually about 8-10 minutes. Reserve 1/2 cup of pasta water before draining the noodles.

Step 3

In a large skillet, heat 6 tablespoons of unsalted butter and 1 tablespoon of olive oil over medium heat until the butter is melted.

Step 4

Add the minced garlic to the skillet and sauté for about 1 minute, or until it is fragrant but not browned.

Step 5

Stir in the freshly chopped parsley, thyme leaves, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for an additional 30 seconds to combine the flavors.

Step 6

Add the cooked and drained noodles to the skillet with the butter sauce. Toss to coat the noodles evenly. If the mixture seems dry, add a small amount of the reserved pasta water, 1 tablespoon at a time, until the desired consistency is reached.

Step 7

Remove from heat and, if desired, sprinkle 1 cup of grated Parmesan cheese over the noodles. Toss again to combine.

Step 8

Serve warm, garnished with extra chopped parsley or Parmesan if desired.
