Ingredients

  • 16 ounces Sugar cookie dough
  • 1 box Brownie mix
  • 0.5 cup Butter
  • 3 large Eggs
  • 3 tablespoons Water
  • 3 drops Yellow food coloring
  • 3 drops Green food coloring
  • 3 drops Red food coloring
  • 1 cup Shredded coconut
  • 1 cup Powdered sugar
  • 2 tablespoons Milk
  • 2 teaspoons Sesame seeds

Directions

Step 1

Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper and grease a square baking dish for the brownies.

Step 2

Prepare the sugar cookie dough according to the package or recipe instructions. Roll the dough into small balls, about 1.5 inches in diameter, and place them on the parchment-lined baking sheets. Flatten each ball slightly to resemble a burger bun top.

Step 3

Sprinkle a pinch of sesame seeds onto half of the flattened cookies to create the appearance of burger bun tops. Leave the other half plain for the bottoms.

Step 4

Bake cookies for 10-12 minutes or until the edges just start to turn golden. Remove from the oven and let cool completely.

Step 5

While the cookies bake, prepare the brownie batter according to the box instructions, incorporating the butter, eggs, and water. Pour the batter into the prepared square pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let the brownies cool completely.

Step 6

Cut the cooled brownies into small, round shapes approximately the same diameter as the cookies. Use a round cookie cutter or the rim of a small glass for uniformity.

Step 7

In a small bowl, mix the shredded coconut with the green food coloring until it resembles shredded lettuce. Set aside.

Step 8

In two separate bowls, make red and yellow icing by mixing powdered sugar, milk, and food coloring (red in one bowl, yellow in the other). Stir until smooth, adjusting the consistency with more milk or powdered sugar if needed.

Step 9

Assemble the ‘hamburgers’: Place a plain cookie (bottom bun) on a work surface, top it with a brownie round (patty), add a drizzle of red (ketchup) and yellow (mustard) icing, sprinkle with the green coconut (lettuce), and finish with a sesame seed-topped cookie (top bun).

Step 10

Repeat with the remaining cookies, brownies, and toppings until all 'hamburgers' are assembled.

Step 11

Serve immediately or store in an airtight container for up to 3 days. Enjoy the surprised reactions from your guests!
